The perfect burrito bowl
I love “meals in a bowl”. All the flavors merge together and you have as many options as you have vegetables in your refrigerator! For that matter, you have grain options as well. Rice is the standard grain used, but you can try quinoa as well.
Beans too can be changed up. Black beans are the classic, but pinto or cannellini would also work well.
This bowl includes the traditional bell peppers, red onion, black beans and avocado, but if for some reason you prefer mushrooms, sauteed kale or spinach, plus some sweet potato, have at it!
Your imagination and the contents of your pantry can dictate the ingredients – have fun and let us know any combinations you enjoy.
