Dairy Free Desserts: Apple Crisp Recipe
When apples are in season, it’s fun to enjoy this healthy fruit. Remember to only consume the organic varieties as apples tend to be heavily sprayed putting them on the “Dirty Dozen” list of fruits and veggies to be avoided. My husband loves “crisps” but when you’re avoiding gluten and dairy and oats, not to mention refined sugar, the challenge can seem insurmountable. He was extremely happy with this dairy free apple crisp recipe that has no grains and no refined sugar. I hope you enjoy it too!
5 organic fuji or granny smith apples, cored and sliced
1/2 cup of coconut sugar or honey
1/2 tsp of cinnamon
1/4 tsp of organic vanilla
1 3/4 cup of Dr. Vikki’s Granola
1 cup filtered water
Place 1 cup of filtered water and sliced apples to a medium saucepan.
Add 1/4 cup of coconut sugar, 1/2 tsp of cinnamon and 1/4 tsp of vanilla to the apple mixture.
Cook the apple mixture on medium heat for 5 to 10 minutes or until apples have begun to soften.
Once cooked, add the apples along with all the liquid to a medium size glass dish.
Top with Dr. Vikki’s Granola and sprinkle 1/4 cup of coconut sugar or honey on top.
Bake in a 350 degree oven for about 20 minutes or until granola is golden. Serve by itself or with coconut ice cream or coconut whipped cream.
