You know when you go to a restaurant and you receive an appetizer that’s so pretty you don’t even want to eat it, at least at first? It’s so aesthetic looking that you just have to take a picture?
This recipe fits the bill AND it’s delicious, of course.
Butternut squash is healthy, filled with vitamin A, fiber, potassium and magnesium – truly a health food. Hint: buy your butternut squash already peeled and cut. It’s difficult and time consuming to peel and cut a butternut squash and this is what I do.
Onions, in the allium family, are anti-cancer, anti-inflammatory, and they contain vitamin C, B, iron, folate and magnesium.
The recipe is very easy, but so delicious that it looks like you slaved for hours to make it. You could definitely also serve it as an entree with a large salad, but bruschetta is classically thought of as an appetizer.
